Kale Sausage Skillet


  • 3 C. Kale-any variety
  • 2 Tbsp. Avocado Oil or Olive Oil
  • ½ tsp. minced garlic
  • ½ medium red onion
  • Salt & pepper to taste
  • 2 Gluten & Dairy free Sausage links (I used a sweet spicy blend)


Wash and spine the kale.  Dry it thoroughly.  Slice the sausage links.  Put oil, garlic, onions, kale, and salt and pepper to a skillet on medium heat. Sauté for 2 minutes, add the sausage slices.  Continue sautéing until the sausage is cooked, and green are wilted.

*Can be eaten as is, or on a bed of cauliflower “rice”
*Add coconut aminos for an Asian-style meal
